A Horse That Doesn't Need Horseshoes
We blew the suspension on Pancho’s car getting here. That’s how unhinged things got – the car ricocheting noisily along the scrawled signature of dust roads and wild agave fields carved through the Jaliscan landscape. The distillery itself is guarded by a donkey and a few penned goats beside a river that pounds the rocks while the land around is yellow and dry. Beyond this dusted, humble entrance lies a cavernous operation: inside, a cart track runs through the vast industrial atrium holding a few stills and enormous glassless windows; white walls spotted with black mould hold the silence and calm alongside the river’s percussion. The rhythm inside is slow and knowing, but how eccentric and confident the liquid they produce. This wild, shoeless horse, this Caballito Cerrero.
This very limited photograph is one of only three images from our adventure making Tristan Stephenson’s Agave Safari to be released as a print to buy, each in strict edition of only 8. This is a rare slice of a rarer adventure into the heart of the agave.
